Quince Paste


  • 1 KG. SUGAR
  • WATER.

Ripe quinces, peeled the cored and sliced, Cook with boiling water, once well cooked and hot, blend them or pass them through a food mill.

Put the sugar with a little water to make a syrup in pot where we move to cook Quince clear, always well, stirring so that it does not reach the boiling point, once made syrup, is will incorporating crushed quince, stirring the whole, trying to avoid that cooked too and take a dark reddish color the cooking time will be 1 hour more or less.

Once cold and after a few days you will catch the desired consistency.
